2024 Domaine les Carmels 'Les Caprices' Cadillac Cotes de Bordeaux, France Carlos Raposo 5 hectares (2024+)Variety: Merlot Vine Age: Planted in the 1980s, 1990s, and 2018 Terroir: From multiple plots in the Cadillac, multicolored clay with limestone inputs, soil up to 8 meters deep. Viticulture: Certified organic (Qualisud, 2010), Bordelaise pruning. Vinification: De stemmed, uncrushed, ambient yeast fermentation, short pumpovers to limit the tannin structure, aged for 4 6 months in stainless steel tank, minimal (if any) added SO2 after vinification.
